Lentil melt (Vegetarian)

I don't miss meat at all but I always loved tuna and a good tuna melt, I recreated one with lentils and the taste and texture were quite similar and it was amazing! Lentils are so rich in both iron and protein that this is a great balanced lunch! To make vegan use some vegan mayo and leave out the cheese :)
Ingredients:
2 tbsp green lentils, cooked
1 tbsp sweetcorn
10g cheddar, sliced or grated
1 tbsp mayonnaise and/or ketchup
1 crusty roll
Method:
1. Mix the lentils, sweetcorn and sauce together in a bowl and spoon into the roll.
2. Sprinkle with cheese and grill for a few minutes until warm and the cheese is melted.
3. Serve and enjoy! Cassidy xx
