Chocolate Orange Granola

When it comes to breakfast, I almost always have some sort of smoothie, with a base of bananas. I got my food delivered last night (at 10.30pm - the cheapest time slot) and realised that I forgot to put a note on there about ripe bananas - so I end up with 20 bananas that are the greenest I have ever seen. I thought it might be a good idea to put a couple of them next to the radiator and that the heat would help them ripen more quickly - it's safe to say that idea was not a good one and I ended up with half  'cooked' black/green bananas which were definitely not edible, I did try them though and kinda wish I hadn't! By now it was evident it was plan B for breakfast; oats. I adapted this recipe from one of my first posts where I used apple juice as a base, I really wanted to use chocolate in this recipe and then it occured to me that orange and chocolate go perfectly together! So I give you, rich & delicious super crunchy granola with orange zest and cocao nibs. This granola tastes absolutely devine and best of all, its nutritious and filling too!

Chocolate Orange Granola with Soy Milk

You'll need:


  • Small Saucepan
  • Mixing bowl
  • Measuring Cup
  • Baking Tray
  • Wooden Spoon/ Spatula
  • Fine grater
  • Grease-proof paper

Ingredients:


  • 1 unwaxed organic orange
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil
  • 1 cup jumbo rolled oats
  • 2 tbsp cocao powder
  • 2 tbsp cocao nibs (optional)
  • 1/3 cup chopped mixed nuts

Method:

  1. Preheat the oven to 180°C and line/ grease the baking tray.
  2. Melt the coconut oil and add it to the mixing bowl along with the zest of 1/2 orange, juice 1/2 orange (~1/3 cup) and the maple syrup. Mix together well, then add the rest of the ingredients and stir together.
  3. Spread out on a baking tray and bake for 15 mins, mixing every 5 mins, then remove from the oven and allow to cool. Serve up with some dairy free milk or yogurt and enjoy! Cassidy xx
