Fresh Veggie and Hummus Roll

Just a quick post sharing what I had for brunch with you, this was a hummus and fresh veggie sandwich with the fresh tomatoes and spinach I picked yesterday as well as basil from my plant & mushrooms. It is completely vegan, super healthy, packed with flavour and perfect for a quick meal! If you're looking to make your own hummus then check one of my previous posts for the hummus recipe :)

Ingredients:
Seeded wholemeal crispy roll/bread
2 tbsp hummus
3 mushrooms
1 handful spinach
2 fresh medium tomatoes
5 basil leaves, torn up
1 tsp oil
Salt and pepper to taste


  1. Cut up the mushrooms, tomatoes and spinach and fry off, season with salt & pepper.
  2. Spread hummus onto the bread.
  3. Fill the sandwich with veggies and top with fresh basil.
