Mint Choc Chip Smoothie


When I was younger I never used to like chocolate ice cream, but I would always choose mint choc chip instead, and I couldn't help but be a little disappointed when it was white in colour rather than green, believing that the colouring made it taste right. This smoothie is inspired by mint choc chip ice cream, but naturally coloured green with avocado and a little spinach, which I promise you can't taste at all, for that proper mint choc chip experience!


It's super creamy and delicious and uses a mix of fresh mint and peppermint extract for that classic minty flavour. I also used cacao nibs for a little extra texture, but dark chocolate will also work in this recipe.


So blitz up your ingredients, then pulse in your cacao nibs and enjoy your delicious mint choc chip smoothie!

Mint Choc Chip Smoothie | Serves: 1-2 | Time: 5 mins

You'll need

  • Blender
  • Measuring cups & spoons
  • Knife

Ingredients

  • 1 large ripe banana
  • 1/2 avocado
  • 3-4 pitted fresh dates
  • 1 large handful spinach
  • 8 mint leaves
  • 1/4-1/2 tsp peppermint extract (to taste)
  • 1 cup ice cubes
  • 1.5 cups unsweetened soy milk
  • 2 tbsp cacao nibs or 10g dark chocolate

Method

  1. Add the banana, avocado, dates, spinach, mint, peppermint extract, ice and soy milk to a blender and blitz until smooth.
  2. Then add the cacao nibs or chocolate and pulse a few times until evenly dispersed.
  3. Serve up and enjoy!
