Vegan Bangers & Mash

Time: 35 minutes
Serves: 2


This next dish is inspired by the traditional British dish of bangers (sausages) and mash, it consists of sage and onion tofu, homemade baked beans and two potato mash, its wonderfully tasty as well as healthy, but also the perfect comfort food for a cold day! The trick to this dish is multi-tasking, whilst one aspect is cooking you can be working on another part and it will done in no time. I also couldn't resist serving this dish up with a dash of brown sauce, to me it belongs with bangers and mash!



You'll need:


  • 2 saucepans,
  • 1 frying pan
  • wooden spoons
  • potato masher
  • Oil for frying

Ingredients:


  • 1 cup mixed beans, canned or dried (soaked overnight and cooked for 45-50 minutes)
  • 4 large tomatoes, chopped
  • 1/2 red onion, diced
  • 1 garlic clove, crushed
  • 1/4 cup red wine
  • 1/4 cup vinegar
  • 3 tbsp brown sugar
  • salt & pepper to taste

  • 2 large potatoes, peeled and chopped into small chunks
  • 1 sweet potato, peeled and chopped into small chunks
  • 1 tbsp olive oil
  • 1/4 cup soy milk
  • salt & pepper to taste

  • 1/2 block tofu (I use Caldron's organic)
  • 1/2 red onion, thinly sliced
  • 1 clove garlic
  • 3 tbsp soy sauce
  • 2 tbsp red wine
  • 2 tbsp sage, dried or finely chopped fresh
  • Brown sauce, to serve (Optional)

Method:

  1. In a saucepan add a splash of oil, the diced onion, garlic and tomatoes and simmer on a medium heat for 10 minutes, then add the wine, vinegar and brown sugar and simmer for a further 10 minutes, before stirring in the beans and leaving on a low heat.
  2. In the second saucepan boil the potatoes for 12-15 minutes until soft, drain and transfer back into the saucepan, then mash together with the oil, milk and a dash of salt & pepper
  3. Toast the thyme in a dry frying pan for 1-2 minutes, before adding a splash of
    oil to the pan along with onions and garlic and fry for 5 minutes, then add the tofu and allow to brown.
  4. When the tofu has browned slightly, add the soy sauce and red wine to the pan and reduce until the liquid has evaporated from the pan and the tofu is slightly crispy on the outside.
  5. Serve all the components up with a dash of brown sauce and thoroughly enjoy! Cassidy xx
