Sugar-free Chocolate Orange Muffins

Chocolate. Just a mention of the word can bring joy to most people's faces (unless you don't have any of course). The word chocolate just screams indulgence and decadent mouthwatering flavours and when combined with orange just brings it to a whole new level. So what if you could have rich, moist & utterly delicious chocolate orange muffins without any added sugar? These muffins are a perfect treat for mothers day without the usual added guilt that comes with consuming chocolate cake and best of all ready in 30 minutes - your loved ones won't be able to refuse! I'm so excited for mother's day this year, I haven't seen my mum since January due to being at uni so I really can't wait. This year my mum and nan are going to visit me and we're going to go to Monkey World for the day - for those of you who haven't seen the show 'Monkey Life' (highly recommended), monkey world is a sanctuary for monkey's throughout Europe from backgrounds of illegal trade, abuse and neglect who are then rehabilitated into natural living groups. I'm really looking forward to the visit and hoping that there are some baby ones to take pictures of too!
Sugar-free Chocolate Orange Muffins

The muffin recipe does not have any added sugar in, although I did add a small amount of orange chocolate to the center of each to make them even more melty and delicious - to make completely sugar free add a small amount of 'choc shot' to the centre of each before cooking. Choc shot is a 100% natural hot chocolate liquid that can be used in things like baking and is absolutely delicious, it also comes in orange spice! It's available in places like Waitrose and Holland and Barrett for those of you who haven't seen it around before and if I had any then it would have been used in today's recipe in place of the orange chocolate - I've linked it below for convenience in locating!
Sugar-free Chocolate Orange Muffins

You'll Need:

  • Measuring Cups
  • Small Saucepan
  • Mixing bowl
  • Spatula
  • Muffin Tray
  • Muffin Cases
  • Sieve

Ingredients:

  • 4 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1.5 cups orange juice
  • 1.5 cups plain flour
  • 1/3 cup cocoa powder
  • 1 tsp (unwaxed) orange zest
  • 1/2 tsp cinnamon
  • 2 tsp ground chia seeds
  • 1 tbsp baking powder
  • 25g orange chocolate /orange choc shot

Method:


  1. Preheat the oven to 200C and line the muffin tray with paper cases
  2. Melt the coconut oil in a small saucepan before adding to the mixing bowl with the maple syrup and orange juice. 
  3. In another bowl combine the dry ingredients together before gradually sieving into the liquid bowl, fold together and leave for 5 minutes for the chia seeds to thicken.
  4. Spoon a small amount of mixture into a paper case, put a few pieces of chocolate/ small amount of chocshot into the centre and top with the rest of the mixture until the cases are roughly 3/4 full. Repeat with the rest of the muffins and bake for 20 minutes. 
  5. Leave the muffins to cool before consuming (the cake will stick to the paper case when still warm) & enjoy with a cup of tea! Cassidy xx
