Vegan Bacon & Sprouts Farfalle | Serves: 4 | Time: 15 mins

You'll need

  • Frying pan/cast iron
  • Spatula
  • Saucepan
  • Chopping board
  • Knife
  • Colander
  • Ladle

  • Splash oil
  • 120g vegan bacon (I used This)
  • 1 stalk Brussels sprouts
  • 3 cloves garlic
  • Heaped tsp wholegrain mustard
  • 200g vegan creme fraiche (I used Oatly)
  • 250g farfalle pasta
  • Handful chives, chopped
  • Salt & pepper

  1. Bring a large pan of well-salted water to the boil.
  2. Chop the bacon into pieces, heat the pan on a medium-high heat, add a splash of oil and cook the bacon until slightly crisp.
  3. Add your pasta to the boiling water and cook until al dente.
  4. Remove the sprouts from the stalk and wash them, then slice into thin pieces. Add to the pan and cook for 5-7 mins until tender and slightly charred. Mince the garlic, reduce the heat, add to the pan and cook for a few mins.
  5. Then add the mustard and creme fraiche and stir through. Add in a ladle of pasta water (1/2 cup), drain the pasta and add to the pan. Stir together well, season generously with black pepper and top with your chives.
  6. Serve up and enjoy!
