Tequila-Soaked Watermelon with Chili Lime Salt

Tequila-soaked watermelon with fresh lime, chili lime salt (Tajin) and fresh mint, the ultimate summer party snack. Perfect served crisp and cold out the fridge or for a heatwave party, pop it in the freezer for at least 4 hours before serving. 

I absolutely love the flavours here, that just scream sunny summer's day and for those in the UK, this would be a perfect addition to a bank holiday Jubilee party. Juicy, sweet watermelon infused with the almost smoky flavour of tequila, layered with mouthwatering fresh lime, rounded off with the tangy lime and chilli salt and fresh mint - like a watermelon margarita in snack form!

This dessert/snack was inspired by a similar dish I had at a restaurant and I just had to recreate it - you can go as heavy or light on the booze as you like and any leftover juices are perfect as a shot for the brave ones of your group, or the beginnings of a great cocktail! P.S. remember to keep this away from children!

Tequila-Soaked Watermelon with Chili Lime Salt | Serves: 6-8 | Prep time: 10 mins | Rest time: 2 hours


You'll need

  • Chopping board
  • Shallow bowls
  • Measuring cups and spoons
  • Microplane/zester

Ingredients

  • 1 medium watermelon
  • 1/2-1 cup tequila (depending on preferences)
  • 2-3 limes (zest & juice)
  • Handful mint leaves, thinly sliced
  • Tajin* (chili lime salt)

Method

  1. Carefully slice the watermelon into rounds 2-3cm thick and then into quarters.
  2. Arrange the wedges into shallow bowls and pour over the tequila. Pop in the fridge for a couple of hours, allowing the tequila to soak in. 
  3. To serve, zest over a couple of limes and squeeze some of the juice. Then slice the limes and serve the remaining alongside the wedges. Sprinkle with the Tajin and fresh mint, serve up and enjoy!
  4. If you want to serve these frozen, follow the steps above and then freeze for up to 4 hours before serving.

*Tajin seasoning isn't widely available in UK supermarkets yet but is available on Amazon and in some specialty stores, it's delicious on tropical fruits like mango or pineapple and is fantastic for a chili salt rim on a margarita too!
