4 Ingredient Vegan Nutella

I met a couple more people on my course on friday who are vegetarian and vegan, so before our chemistry lecture there were four of us having a very passionate discussion about our favourite foods and what we love to make, someone brought up hazelnut butter; which I was yet to try, so of course I had to go and get some! Hazelnut butter may just be my favourite of all the nut butters (I'm sorry peanut butter!) and the 170g jar I bought on saturday is more than 2/3rds gone already (whoops), I could literally eat it by the spoonful, it is so delicious. So this morning I set out to make a more nutritious version of nutella, using the nut butter and it is amazing, this nutella only has 4 ingredients; water, dates, raw cocao and hazelnuts (Meridian hazelnut butter is 100% hazelnuts). I served this up with some apples & bananas for breakfast, but feel free to put it on whatever you want; pancakes, oatmeal, toast, just a spoon even. I must confess that there was probably more nutella than fruit with each bite, I'll be lucky if there's still some left at the end of the day to be honest. I also got some of my housemates to taste it and they absolutely loved it (I'll have to watch that they don't start eating it). For those of you in the UK, I got the hazelnut butter & raw cocao in Holland and Barrett and the dates from Abel & Cole, but Tesco do sell fresh medjool dates in 180g packets for £2 each. You HAVE to try this!!

You'll need:

  • Food processor/ blender
  • Spoon


Ingredients:

  • 4 large medjool dates, stones removed
  • 2 tbsp raw cocao powder
  • 2 tbsp hazelnut butter
  • 1/4 cup water


Method:

  1. Blend up the ingredients in a food processor, scraping the sides down with a spoon when it stops blending - if needed add extra water 1 tbsp at a time until the mixture is smooth and creamy.
  2. Serve up with fruit of your choice or with your morning, oats, toast, pancakes or anything else you fancy and enjoy! Cassidy xx
P.S. If you have any left store it in the fridge in an airtight container and stir up again before using next.
