Wholesome Hummus

This hummus is great as an afternoon snack and served with various veg, it is made with peanut butter instead of the usual tahini and has a good fresh taste to it. I am sitting here enjoying it with a slice of seeded wholemeal toast whilst watching Harry Potter on tv and discovering that drinking a mocha in 28 degree heat is never a good idea!
My reusable Starbucks cup

400g of chickpeas, rinsed well (Soak overnight if using fresh and boil for 90 minutes)
3 tbsp smooth peanut butter
3 tbsp lemon juice (or more as needed)
60ml olive oil
Cold water (for consistency)
salt and pepper (to taste)
1 clove garlic, crushed
Paprika (to serve)

Whiz all the ingredients together in a food processor and add more lemon juice and cold water to alter consistency, keep tasting as you go along until you are happy with it. Sprinkle with paprika and serve up with veg, crackers, pitta or toast and enjoy! Cassidy xx
