Fresh Mint Penne (Vegetarian)

Healthy and super fresh!
75g wholewheat pasta, per person
1/2 red onion, finely chopped
1 courgette, chopped
1/2 cup peas
1tbsp butter
1 cup baby plum tomatoes, chopped
1 stock cube
1 tbsp whole grain mustard
4 tbsp fresh mint, finely chopped
200ml plain yogurt
1. Boil the pasta in salted water for 10-12 minutes. Add in the peas for the last 3 minutes.
2. Melt the butter in a pan and add in the onion, courgette, stock cube and mustard and cook for 5 minutes.
3. Add in the mint & tomatoes and cook for 2 more mins.
4.Remove the pan from the heat and stir in the yogurt.
5. Drain the pasta and stir into the sauce.
6. Serve up and enjoy! Cassidy xx
