Slow Cooked Mushroom stew

Cooked this in the slow cooker so it was really easy and ready for when I got home. I prepared the veg the night before and just added the gravy and switched it on in the morning :)
2 sweet potatoes
4 carrots
300g closed cup mushrooms
1 red onion
2L vegan gravy powder
1.Roughly chop all the veg and place into the ceramic bowl of the slow cooker.
2. Make up the gravy and pour over the veg.
3. Turn the slow cooker on a low eat and leave for at least 6 hours to cook until you're ready to eat it.
4. Serve up and enjoy! Cassidy xx
