Egg fried rice (Vegetarian)

Super easy and a great nutritious meal :)
Hope everyone who is applying to uni is well along the way, happy to announce I have 3/5 offers so far, including my first and second choice! :) 
Ingredients:
75g wholegrain rice, per person
3-5 tbsp soy sauce
2-3 tbsp lemon juice
1/2 tsp chilli
2-4 eggs
1 cup mixed veg, chopped
1 tsp oil
Method:
1. Boil the rice for 30 minutes, a few minutes before the end add in the veg and then drain.
2. Stir in the soy sauce, lemon juice and chilli evenly.
3. Heat up a pan with the oil, crack in the eggs and mix up.
4. Allow the eggs to partly cook, then add the rice to the pan and stir in until fully cooked.
5. Serve up and enjoy! Cassidy xx
