Avocado baked eggs (Vegetarian)

These are a tasty, healthy and simple breakfast, perfect after a morning run. They take 15-20 minutes to cook and I served them up with ryvita spread with the rest of the avocado.
Ingredients:
1avocado
2 eggs
Paprika
Method:
1. Pre-heat the oven to 180℃.
2. Cut the avocado in half and scoop out 1-2 spoons of avocado
3. Crack in an egg - yolk first to ensure it doesn't spill over
4. Sprinkle with paprika and bake for 15-20 minutes
5. Serve up and enjoy! Cassidy xx
