Southern Fries & Cool Ranch Dip

Southern Fries & Cool Ranch Dip 
I'm so excited to share this next recipe with you all, not only is it delicious and of course vegan but its's also healthy, omitting all of the nasty stuff usually included with fried chips and cool ranch dip, like excess salt, sugar and fat. So here you are, perfectly seasoned southern style fries made from white and sweet potatoes with a copy-cat vegan cool ranch dip. The fries are blanched then baked coated in seasoning without any oil to produce crispy delicious chips, perfect as a snack or part of a main meal.

When I started cooking I only had fries for this post; as they were baking in the oven inspiration struck and vegan cool ranch dip - the perfect accompaniment to southern style fries was created! The base of the dressing is made from cashew nuts - is there anything this nut can't do? Blitzed up with some onion & garlic powder, with some parsley and chives stirred though this cashew nut dressing is the perfect copy-cat ranch dip. The real secret is the fresh taste from the dried parsley which really brings that "cool" flavour to the creamy dip.
Vegan Cool Ranch Dip
These fries were intended to be for dinner, however after I had finished taking pictures my mum ventured into the kitchen and we ended up eating half of them as a mid-afternoon snack. More often than not after I have cooked something for my blog it's gone before the pictures have even been uploaded to my laptop; I think that's a good thing in some ways though, if my heart (stomach) isn't in a recipe then I won't upload it and I know that if I can't stop munching then it's definitely a success!
Southern Fries & Cool Ranch Dip

You'll need:

  • Veg peeler
  • Chopping board
  • Knife
  • Saucepan
  • Large baking tray x2
  • Grease-proof paper
  • Spatula
  • High-speed blender/food processor
  • Cup/spoon measures

Ingredients:

Fries:
  • 2 white potatoes
  • 2 sweet potatoes
  • 2 tsp paprika
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp ground coriander
  • pinch black pepper
Cool Ranch Dip:
  • 1/3 cup cashew nuts
  • 4 tbsp water
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • pinch salt
  • 1 tsp dried parsley
  • 1 tsp dried chives

Method:

  1. Preheat the oven to 220C and line two large baking trays with grease-proof paper.
  2. Peel and chop the potatoes into fries roughly 1cm thick (thinner for crispier fries). Add to a saucepan of water, boil for 12 minutes and then drain fully. Shake in the pan to make the potatoes slightly fluffy. 
  3. Meanwhile mix together the spices for the fries and then coat the drained potatoes in the seasoning. Spread out on a baking tray and bake for 40 mins, turning the potatoes half way through.
  4. For the cool ranch dip blend together the cashew nuts, water, garlic, onion and salt until smooth. Scrape down the sides of the blender with a spatula, then stir in the parsley and chives, transfer to a serving dish. 
  5. When the fries are crisp and golden brown (~40 mins) remove from the oven and serve with the dip - enjoy! Cassidy xx
