Strawberry Coco Cosmopolitan
Fresh Strawberry juice, vodka, coconut water & mint combine for this strawberry coco cosmopolitan, a fresher and healthier alternative to cocktails made with sugary syrups. This drink is perfect to share with friends, the refreshing taste of this pink drink, served in a chilled glass with a sugar rim is a sure way to impress, whilst keeping you cool on a hot summer night.

This drink is the perfect balance of naughty and nice, helping to keep you hydrated whilst you have a good time. The infusion of strawberry and mint are combined with and coconut water, for you to experience all the elements in perfect balance, with a subtle taste of vodka, great as a pre drink or as part of a chilled night in with friends.

Making this cocktail brought me back to my visit to thailand last summer when we made drinks using fresh coconut water straight from young thai coconuts & enjoyed them with family and new friends meal on our last night there. It also reminded me of how cheap young coconuts are out there compared to coconut water we get in the UK; special offers are always a good time to stock up! - That said, it still works out to be about £2 for a large glass.
Strawberry Coco Cosmopolitan

You'll need:


  • Juicer
  • Pitcher + lid
  • Serving glasses
  • Small plate
  • Stirrer

Ingredients:

  • 150 ml vodka
  • 25 strawberries
  • 1 litre coconut water
  • 15 mint leaves
  • 15 ice cubes
  • 1 tbsp sugar (to serve, optional)

Method:

  1. Place the serving glasses into the freezer 5 minutes before serving.
  2. Juice the strawberries and pour the juice into the pitcher, add the vodka, coconut water, mint and ice and stir well. Save the pulp for another recipe by storing in the fridge - I will be posting a strawberry and ginger flapjack bar recipe later in the week.
  3. Pour the sugar onto a small plate and remove the glasses from the freezer and run the edge of the glasses through the sugar.
  4. Serve up your cocktails and enjoy! Cassidy xx
